Apple Sharlotka (or Apple Upside Down Cake...You're Welcome)

Last night I had some weird dreams.

I have heard that pregnant women get unusually bizarre dreams, but to be honest, I typically sleep like the dead and so I {foolishly} didn't really think that would happen to me.

Last night I dreamed that I gave birth in a pitch-black hospital room with just a nurse with me (no Shaun, no other family members), and I waited a full 12 hours before calling anyone (including my husband) to tell them the news. Then I left the hospital to walk down the street for a pumpkin spice latte. I should mention that was without the baby in tow.

So yeah. I was a little freaked out.

You know, if you consider that kind of thing weird.

Maybe American Horror Story is just too much for me to handle this season? I think I was having a flashback to season 1.

Anyway.

I woke up to a sun-shining, gorgeous fall day and I was craving something sweet for breakfast...namely this A-mazing apple upside down cake that I just can't get out of my head.

 

You see, I made this cake a few weeks ago when I received my Secret Recipe Club assignment for October. When I wandered over to simply.food to pick out a recipe, one dish sounded more exotic and more delicious than the next. Since I was going through my crazy apple phase earlier this month, when I stumbled upon the Apple Sharlotka (or Russian Apple Cake...or Apple Upside Down Cake!!!), I knew it was written in the stars.

 

What, you've never met your destiny with a baked good before?

This cake was so so good. Is it too bold to say that it's one of my favorite recipes ever?

Because it really is. Not only for the taste, but for how easy this cake was. It came together in a snap. Glorious, sugar-coated apples atop a moist, cinnamony cake and doused with a healthy helping of powdered sugar for good measure...there's not much better in life than that my friends.

Apple Sharlotka (Apple Upside Down Cake)

*Adapted from simply.food

1 large granny smith apple, peeled and cored (but not chopped!)

1 tsp lemon juice

2 Tbsp brown sugar

1 C self-rising flour

1 C granulated sugar

4 Tbsp unsalted butter, softened + more for greasing pan

4 Tbsp canola oil

2 eggs

1 tsp vanilla extract

½ tsp ground cinnamon

Confectioners’ sugar (for dusting)

Preheat oven to 375 degrees.

Peel the apple and remove the core; but keep apple in tact. Slice the apple into thin rings and place in a mixing bowl. Drizzle with lemon juice and set aside.

Grease a 9-inch round baking pan with butter and set aside.

In a stand mixer (or with a hand mixer), cream together the butter, granulated sugar and oil. Mix in the vanilla and eggs until completely combined.

Stir in the flour and cinnamon until just combined.

Lay the apple rings on the bottom of the baking pan. Top with brown sugar. Pour cake batter over the apples and smooth with a rubber spatula.

Bake for 25-30 minutes or until a toothpick inserted in the center of the cake comes out clean.

Let cool for 10 minutes, run a knife around the edges of the pan and flip out onto a wire rack or cutting board to continue cooling. The carmelized apples should be on top, looking regal and heavenly. Dust with confectioners sugar before serving.

*Note: I pour a tablespoon of confectioners sugar into a sieve and use that to prettily sprinkle the sugar over the cake. It looks like snow :)

 

 Slice it up.

 

Eat lots.

Thursday Thoughts

I am having a love affair with the weather this week. It's crisp, cool and makes me crave a pumpkin spice latte each afternoon.

 

 

Too bad I already had my one treat for the season. At $5.17 a pop, I shed a few tears when I paid for that one.  It's DIY pumpkin syrup or bust from now on.

I decided that every day during lunchtime I'm going to take a walk. Do you do this during the work day? Sometimes I feel like it's not possible, but honestly, there is no reason why I can take 10 minutes to walk a few blocks. Exercise + mental well-being = good.

 

Being pregnant makes you (well, actually me) do crazy things. In addition to list after list after list in my notebook and on my computer, I am continuously having minor panic attacks about projects that need to get done in my house. Did you know that I cannot possibly give birth unless I have organized all of my 2011 and 2012 photos (thousands) into photo books, hang artwork on all of the empty walls in my apartment and create an over-the-door wrapping paper storage solution for our den closet? That's normal, right? I'm thinking something reminiscent of this Container Store option:

And speaking of wrapping paper, if you have any ideas for this grand plan of mine, I'd love to hear them. I'm obsessing over this amazing transformation from IHeart Organizing. And if you don't read Jenny's site...dude, get on that. You will never feel worse about your own organizational skills or more motivated to get your sh*t together.

 

I also had a meltdown every single evening this week. My poor husband. He's so nice about it. I'm all like 'I hate everything in life! Except you and Baby H! But everything else! The universe is against me in everything I try to do!'

And he just calmly shakes his head in agreement and tells me that next week will be better. And then he makes me dinner. 

Meanwhile, part of my meltdown(s) stemmed from not having clothing that I like. I know when you are pregnant, people tell you to just buy bigger clothes or work with what you've got. But no way. When you seemingly hit rock bottom, the credit card comes out. I may have gone one a little shopping binge this week and purchased the following (among many other things):

On the bright side, I feel great today!

Oh and while we're on the subject of shopping binges, do you know how cute baby clothes are? No, seriously. The little hats and booties are enough to make my heart want to burst. I held out so long from buying baby clothes, but this week the flood gates opened. Be still my heart.

Lastly, I'm super excited for the Cannon sisters to be reunited this weekend after 2 months (!!) as Christine will be home from school for my cousin Veronica's wedding on Saturday (!!). So excited to celebrate with everyone!

Fall TV Obsession

Can we talk about television for a moment?

I feel like I often want to talk about television and it's no secret that I have a major mild obsession with the tube.

I can't help it...I love me some good TV.

I know that TV gets a bad wrap when it is compared to the silver screen, but give me a good season of dramatic TV on DVD any day and I will gladly take it home and OD on it in a mere weekend. 

A movie, however? You'll probably find me snoring (or at least breathing with my mouth open, according to my husband) in about 30 minutes flat.

So anyway.

You might say that I have a bit of a problem. And I've brought Shaun over to the dark side. Here's what we're loving this Fall...let's take it from Sunday night, shall we? It's by far our most TV-filled evening. Just when I thought we had it all figured out and the DVR set up properly, The Walking Dead went and started and threw a wrench into our whole master plan. C'est la vie, I guess.

Oh and as a side note...yes I realize that the below list is truly insane, and yes our DVR is carefully orchestrated, and yes, we are now behind on almost every show and already in stockpile mode!

As a side note, I will tell you that I have in fact given up a number of shows, so that counts for something, right?
