Go-To Dinner: Skillet Tortilla Pizza Redux

Well we made it to Tuesday, my least favorite day of the week. It's ok. Tonight I'm having dinner with my bestie Lindsey and so that makes Tuesday a good day!

I have to tell you about something. Ever since I started on Weight Watchers I've been on the hunt for easy peasy dishes and snacks that can be my 'safety' food. Things that I know I can eat guilt free and still be excited about eating them. A tall order?

I thought so.

In keeping with my recent tortilla obsession, I have been eating a lot of skillet tortilla pizzas. They are incredibly easy, come together in about 5 minutes and are incredibly tasty. Who needs a thick, doughy crust? Ok, usually I'd say me...but not if I have a crispy tortilla pizza around!

Skillet Tortilla Pizza Redux

4 WW Points+ for 8" size tortilla (taco size)

6 WW Points+ for 10" size tortilla (burrito size)

1 low carb, whole wheat tortilla (like Mission Carb Balance Whole Wheat)

1/4 C tomato sauce

1/4 C reduced fat shredded mozzarella cheese

dried oregano

dried basil

kosher salt (optional)

cooking spray

Spray both sides of the tortilla with cooking spray. Lay in a dry skillet over medium heat. As soon as it starts to bubble slightly and brown on the bottom, flip over and lower the heat. Pour on tomato sauce and sprinkle with oregano, basil and just a big of salt if desired. Sprinkle cheese over top. Lower heat or turn off completely and cover with a lid for 2 minutes to melt the cheese. Cut into quarters and enjoy!

I really love this as a quick meal for one, or even for a heartier lunch on the weekend. It's so quick, so easy and feels like such a treat! And for just 6 Points+, it's perfect with a side of veggies for a delicious, light meal.

Blue Velvet Giants Superbowl Cupcakes

In case you didn't already guess...I'm kinda sorta just a little excited that the Giants are in the Superbowl.

I made blue velvet cupcakes to celebrate. Nothing says Go Big Blue like royal blue cupcakes with sweet buttercream and red non-pareils. Don't you think?

Last time I tried to make a velvet cake, it was a big fat fail. This time, I made sure that I would get it right. It's for the Giants after all. Oh and t-shirts work nicely as backgrounds for cupcake photos. Just sayin'!

When I pulled them out of the oven, I did a little Cruz-style salsa to celebrate the fact that they turned out blue...not mossy, not brown...just beautiful, Giants blue. You can do it too. And you should! Everyone needs a little kitchen salsa in their lives. And some blue velvet cupcakes.

Then I tasted the cupcakes. And I was in a little bit of heaven. Especially since they were incredibly easy and only 6 WW Points+ per cupcake. Even if you don't make these for the Superbowl, you should make them for a random evening...they are just so pretty and yummy. Though I'd rather you make them for the Superbowl.

I just have to decide which of my Giants shirts to wear on Sunday. I'm thinking about my Bradshaw t-shirt (shown above). I like him.

Blue Velvet Giants Superbowl Cupcakes
*Adapted from Betty Crocker
Yields 24 cupcakes
1 cupcake = 6 WW Points+

1 box Supermoist white cake mix
1 Tbsp cocoa powder
1 1/4 C buttermilk
1/3 C canola oil
3 eggs
3 bottles blue food coloring
1 toothpick full violet food coloring gel/paste

for the frosting:
1/2 C butter, at room temperature
2 C confectioners sugar
1 tsp vanilla extract
2-3 Tbsp milk

red nonpareils, if desired

Preheat oven to 325 degrees. Mix cake mix, cocoa powder, eggs, oil and buttermilk together, starting with 30 seconds on low speed, then increasing to medium speed for 1 minute. Add in food coloring (I still have it all over my hands. Classy) and beat for 1 minute more until totally blue and combined. Pour into 2 muffin tins lined with baking cups. Fill about 2/3 full. Bake for 16 - 18 minutes or until a toothpick comes out clean. Let cool.

To make the frosting, beat the butter. Add in sugar, 1 cup at a time, thinning out with milk as necessary. Beat in vanilla. Pipe onto cooled cupcakes. Serve with milk. Eat many.

I know what you're thinking. Is she going to be shoving Giants stuff down our throats all week? Maybe No. But I really love these cupcakes! I hope you like them too!

Five Things Friday

Happy Friday! I'm so ready for the weekend though I'm lamenting all of the rain that is happening right now. If this was a normal winter, this could all be snow! Oh well. I guess I cannot complain since our winter has been less than painful. Anyhoo...it's Friday and that means five things! Enjoy!

I made this on Monday. I adapted it from a recipe that a friend recommended. I made it a little WW friendly. It's cheesy, chickeny and came out to 8 Points+ per serving. A little high for soup, but this is truly filling and decadent. If you are interested in the recipe, I will share it next week.

Words with Friends isn't anything new, but I've really gotten into it lately. I have a bunch of games going and love getting my little notification that it's my turn. My mom is currently beating me in 3 different WWF games. She's really good at word games. One of these days, I'll beat her though.

This is the view from my office. We can see Jersey City, Hoboken and the Hudson River. The sunsets are out of control. It's pretty much the only good thing about daylight savings. I'll take looking at this 5 days per week.

 I got this in my January Birchbox and I love it! I typically use MAC's gel paint pots with a brush for eyeliner, but this goes on super smooth and way faster. Plus I love changing it up from my traditional black to a fun bluish teal color.
