Determined to be a kick ass wife, I developed a love for football and learned to cook in my tiny Jersey City kitchen. I spend my days working in Manhattan, my nights and weekends chasing after a rambunctious toddler, and the hours in between cooking with my husband and feeding my TV habit...oh, and I blog about it all!

What I Ate: Fridge Clean Out Edition

It's Wednesday again and that means it's time for another edition of What I Ate! Thanks to Jenn @ Peas & Crayons for hosting the link up!

This week, I was coming off of the holiday weekend high where I just ate everything in sight. I didn't really have a chance to meal plan or prep for the week and so I ended up ordering groceries to be delivered for last night. So with a semi-empty fridge, I made do what what I had on hand and ultimately, it all worked out, though it was not always pleasant. Let's get down to it!

 

breakfast: dyed easter eggs that i'm trying to use up before they are too far past their prime. these almost were. since the eggs left a lot to be desired, I didn't eat all of it and felt hungry after brek. 

snack: 1 string cheese + 1 babybel cheese

 

lunch: 2 turkey burgers + some green beans. this was leftover from last night's dinner {where i also snapped this photo}. As Shaun noted, it looks like a Picasso smiley face.

 

snack: after lunch i still felt sooooo hungry, so i made a small bowl of oat bran, microwaved with skim milk & sweetener until thick & creamy.

 

after my snack, I wandered into the office kitchen to see what was happening there and tried to resist the quite random assortment of communal goodies. this is a pretty accurate depiction of our kitchen counter on any given day, and I swear, you can't make this stuff up.

 

I resisted a spoonful of pb & avocado matzos, and instead found an about-to-expire yogurt in the office fridge that I had left there probably a long time ago. One more day til expiration, though, so score!

 

dinner: cauliflower pizza, a serious new favorite in the repetoire! I've been using this recipe with a few modifications and it's been awesome.

I totally overdid it with the amount of pizza that I ate, so I was actually too full for my Dukan galette. I know, it's crazy, that NEVER happens! I did have a spoonful of whipped cream which covered my sweet craving for the night.

Overall, this day of eating was a good reminder as to why I need to be fully stocked with groceries. I felt like I was scrounging for food all day and never really felt satisfied, probably because I didn't have any of the foods that I would typically eat. I felt ill-prepared to stay on course and that's just never a good thing. Lesson learned for sure!

What I Ate: Doing the Dukan {kinda, sorta}

Happy Wednesday! I'm rounding up my daily eats for What I Ate Wednesday and linking up with Jenn @ Peas & Crayons.

This week, I've been trying to get back a little bit on the Dukan train. I just can't fathom the idea of pure protein, so I've just been doing protein & vegetable (PV) days. Not how the diet is intended to work, but hopefully I will see some results, albeit a bit more slowly. The last couple of days have actually been pretty tough and I find the absolute toughest part of the day is from the hours of 2-6. Here's hoping that my system is starting to adjust and that today is a better day!

Meanwhile, here's what I ate yesterday:

breakfast: loaded egg casserole, packed with veggies & low fat cheese

 

lunch: shaun made this awesome chef's salad with chopped romaine, cold cut pinwheels, olives, crumbled goat cheese, and topped with creamy balsamic.

 

snack time: string cheese, salami slices rolled up with laughing cow light creamy swiss

 

and since i was still hungry, some cottage cheese w/sweetener + ground cinnamon

 

dinner: maple mustard + tarragon roasted chicken thighs (boneless, skinless) with roasted green beans. this has become a go-to favorite meal. it's super simple and perfect for nights when we don't feel like cooking! there is so little work, it feels like not really cooking, yet huge payoff with this delicious dinner :)

 

dessert: Dukan galette (2 tbsp oat bran, 1 tbsp Greek yogurt, 2 tbsp liquid egg whites all mixed together & cooked like a pancake) topped with sugar free syrup + fat free whipped cream. this galette is such a life saver when following Dukan because it feels like such a special sweet treat!

 

So that wraps it up! I was happy to look back and see lots of veggies through the day. Zucchini, carrots, pepper, tomatoes in the egg casserole, a big leafy green salad, and a whole yummy stack of roasted green beans. It's my mission to keep this up!

What I Ate: St. P Edition

Welcome to Wednesday! I'm rounding up my St. Patty's Day eats today for What I Ate Wednesday and linking up over at Clean Eats, Fast Feets. I've really been loving these posts because it's fun to look back on and also forces me to up my game a little bit on what I'm eating. By the looks of it, I'm not getting nearly enough green veggies, so my plan is to work on that for next week! Yesterday was great because we also managed to eat dinner together as a family, something we've been working on. It's a work in progress, but when it all comes together and happens, it feels really special. Let's get to it!

 

breakfast: oat bran w/water, sweetener, 2 tbsp PB2 & 1/2 sliced banana. there's really just no way to make this look pretty.

mid-morning snack: the remaining half of banana from breakfast

 

lunch: penelope and i made this awesome lemon chicken orzo soup on sunday and so i brought some leftovers. i wish i had some greens in this soup, but i didn't have any at home to throw in. next week for sure!

 

snack: someone brought in these amazing nougat treats for the office and so i had half of one. then i went back for the other half.

 

dinner: beer braised corned beef in the slow cooker + carrots + cabbage (ok so a tiny bit of green!)

 

snack: irish soda bread!

 

So all in all, not a terrible day of eating - everything was delicious! Looking back, I wish I had incorporating a bit more healthy veg, but all in all, I'm happy that I meal prepped on Sunday so that I had plenty of goodies for the week!
