Hi, I'm Rachel.

A few years ago I could barely boil water.

True story.

Determined to be a kick ass wife, I developed a love for football and learned to cook in my tiny Jersey City kitchen. I spend my days working in Manhattan, my nights and weekends chasing after a rambunctious toddler, and the hours in between cooking with my husband and feeding my TV habit...oh, and I blog about it all!

Five Things Friday: Favorite Foods Edition, Part I

Another week here and another gone by too fast! I don't really mind though. It was a great week, spring has sprung and I'm ready for a fun weekend with minimal plans.

Since I just did a Thursday Thoughts post, I thought maybe changing up the Five Things Friday with a theme might be fun. So without further ado, today I'm bringing you Five Things Friday: Favorite Foods Edition! I created this list on a whim...just the first five things that popped in my head. I'm sure this list could go on and on...but apparently these are the foods I'd want to be stuck on a desert island with!

Pancakes

Like these from the Lighthorse Tavern or my nice little lemon blueberry pancakes that can be whipped up at home.

Cereal

I could devour an entire box in one sitting. No problem.

Ice Cream

Like this amazing, towering cup of ice cream from the Penn State Creamery that I enjoyed during THON Weekend.

Peanut Butter

Sigh. I could eat it anytime, anywhere. On a spoon, mixed into desserts, slathered on fruit. Peanut butter is good.

Cheese

Just give me a cheese and crackers plate for dinner (with a glass of wine, of course) and I'm a happy girl. True story.

So...what would be on your list of five favorite foods?

Thursday Thoughts

1. The weather went from cold to rainy to sunny and gorgeous yesterday. My sinuses hate me and the world. But I'm excited that I can wear a skirt today.

2. Shaun has had fantasy baseball drafts all week. I'm not really so down with baseball season because I find it boring. And it goes on forever. Unless watching a game is accompanied by a hot dog and soft serve vanilla ice cream with sprinkles in a cup shaped like a baseball helmet...I'm not really so interested.

3. Last night I watched Something Borrowed. Again.

4. Last night I also went to the gym. Despite running a 5K on Sunday, my legs felt like they had lead in them, making it impossible to go more than 2 miles.

5. Yesterday I tried a deep-fried Milky Way. Yeah, it was pretty amazing. It made me long for hot summer days and boardwalk food.

6. I need a new book to read, stat. Help me!

7. I'm probably late to the party, but I'm so obsessed with this song:

And this one.

8. Last night I whipped up dinner in a flash and it was great. I cooked up some quinoa and roasted leftover broccoli and cauliflower. Topped the quinoa with a little soy sauce and voila...dinner in 15 minutes.

9. I also had a sweet triple chocolate banana milkshake. It was just as delicious as a few nights ago. I don't see why you can't replace the bananas with any fruit of your choice, for those of you who asked. Also, I got the straws from HeyYoYo's Etsy shop, along with some pretty cupcake liners. I had ordered them before the holidays and never used them. I decided that I'd rather just use them up on a making a random night a little special!

10. Shaun and I have been watching Jeopardy in the evening. Actually...we've been DVR'ing it so we can watch it when I get home from work. Not sure if I should feel sophisticated and intelligent or if I should be readying the jeriatric unit for our arrival.

11. I kind of have a crush on Josh Elliott from Good Morning America. Just sayin'.

12. Pauly D Project starts this evening...yay or nay? We will most likely watch it. He's cute.

So those are my thoughts today!

What's going on with you?

What songs are you digging?

What foods are you loving?

What shows are you watching? books are you reading?

Triple Chocolate Banana Milkshakes

Ok you guys...last night I finished the second Delirium book...Pandemonium! I know we have a date to discuss Delirium (the first book) on April 3 (I hope some of you are reading this so we can have a little discussion!). So here's the problem with flying through this awesome series...the third book - Requiem - doesn't come out until 2013! Ahhh! I'm so bummed because it ended on such a cliff hanger. I hate that! Of course, I didn't realize this until I was already partially through the second book. Oh well...still worth reading, even if the wait is a long one!

Oh and remember, if you are on Goodreads, we can be friends!

So last night I had a hankering for something sweet after dinner. I'm trying to be better about eating healthfully and so dessert options are often limited. Mostly, I stick to sugar-free, fat-free pudding, but let's face it...it gets old after a while!

Last night I had an idea for a milkshake. I had just frozen a !@#$load of bananas a few nights ago and always keep a handy supply of instant pudding in the cupboard. By using frozen bananas instead of ice cream and some prepared chocolate fudge pudding, I achieved a delicious, creamy, chocolately milkshake that was entirely guilt-free! Only 3 Pts+ per serving.

Seriously.

I'm mildly obsessed. Even Shaun, Mr. No-Sweets, drank his entire shake.

Triple Chocolate Banana Milkshakes
Serves 2; 3 Pts+ per serving
1 1/4 C fat free milk (or milk of your choice)
1 1/2 frozen bananas
1/2 C sugar-free, fat-free chocolate fudge pudding, prepared
1 Tbsp unsweetened cocoa powder
1/2 tsp vanilla extract
2 Tbsp lite or sugar-free chocolate syrup
1/4 C fat-free Cool Whip

Place milk, bananas, pudding, cocoa and vanilla extract in a large glass measuring cup or in a blender. Blend (in blender or in measuring glass with an immersion blender) until smooth and creamy. Line two glasses with a bit of chocolate syrup and distribute milkshakes in said glasses. Top with a Tablespoon or two of Cool Whip and drizzle with a little more chocolate syrup.

Enjoy immediately.

I think half the fun of this shake is the presentation. Just a little extra work like lining the glass with chocolate syrup and using a whimsical, soda shop paper straw for devouring make this a super special treat that I can't wait to make again and again.

And the best part of all? It's 100% guilt-free! Get out your party hats!

Questions of the Day:

Do you have any guilt-free desserts?

Are any of you reading Delirium for our mini-book club discussion next week?!
