Determined to be a kick ass wife, I developed a love for football and learned to cook in my tiny Jersey City kitchen. I spend my days working in Manhattan, my nights and weekends chasing after a rambunctious toddler, and the hours in between cooking with my husband and feeding my TV habit...oh, and I blog about it all!

This Week...

...I had a love affair with cherries.


...I spent too much money on cherries.

...I became obsessed with banana bread smoothies



...I realized that summer is upon us. I have frizzy hair and sweaty clothes to prove it

...oh and my freckles are slowly starting to creep on out even in minimal sun exposure. I'm ok with it because there's nothing wrong with a little sunshine.


...I realized that I leave for Las Vegas {for work} in just over a week. I’ve got the travel bug and am psyched that between work and personal vacations I get to squash the bug. Or feed the bug. I don’t really have a bug...maybe it’s a bad metaphor.

The point is, I’m excited to kick off the summer with another trip.

...I perfected my {semi-healthy} 2 minute chocolate chip peanut butter cookie cake for one. And I can’t wait to share it with you.

...we installed a custom closet system in our bedroom closet. I can’t believe it’s my closet (thanks Mom!). I kind of want to hang out in there. You know, before I fill the rest of it up. I'll show you pics when I do.

...I bought a jar of coconut oil. Now what the heck do I do with this stuff? Please send guidance.


...I also picked up Justin's Maple Almond Butter. And I'm a little obsessed already. Not so good for an $8 jar of nut butter. I was kind of hoping I'd hate it. But alas, I love the flavor and the texture. It's smooth but with a tiny crunch that feels almost like sugar crystals. Except that it's almonds. And it's good.

 ...I saw this gaggle of geese...and it made me happy :)

What did you do this week? What are you up to for the weekend? And what can I make with this gorgeous coconut oil?

I love almond butter and coconut oil. i use the almond butter in my granola bars and it is just heavenly. Love the pics and looks like yet again your having a great time! Not jealous at all- really- not jealous.

I've been noticing my freckles coming out too...yeay for summer and SUN!

I've been eating cherries by the bowlful and also putting fresh cherries in my steel cut oats and loving the taste! I read dailygarnish.com and I recall her using coconut oil in a few recipes.

oh, I have GOT to try making a banana bread smoothie. stat. and I've heard coconut oil is great for skin!

Happy Friday!!! I'm also thrilled that it is basically summer:-) I haven't had cherries yet but I did overdose on watermelon this week!

P.S. I have a guy friend that uses coconut oil on his face. He swears by the stuff.

This is somewhat unrelated, but you must pick up a jar of cashew butter. Moby wrote a great cookbook based on his restaurant Teahouse a few years back and included this gem:

cashew butter, to taste
apple butter, to taste
1/2 to 1 tablespoon pure maple syrup, to taste
1 banana
4 slices white bread (i use brown bread, cause i dont like white, and its still delish!)
vegan margerine

for each sandwich, slather one slice of bread with cashew butter and the other slice with apple butter. slice the banana (use one quarter for each sandwich) and place it on the cashew butter side. drizzle the maple syrup on the apple butter side. close the sandwich carefully and lightly spread vegan margerine on both sides of the sandwich. grill until lightly brown. then enjoy, enjoy, enjoy!

I love so much about your week! The cherries, the smoothie, that freakin' almond butter! My husband rolls his eyes every time he sees another jar in our pantry now that he knows the price. Oops! But you're right...it's so good! I seriously cannot wait to see your closet and find a semi-healthy cake recipe :) Wishing you a fantastic summer weekend!

I bought the same coconut oil and I'm wondering what to do with it. I think I might use it for skin purposes rather than food for right now. It's great for my skin and hair.

And I too am in love with that Justin's maple butter. DELICIOUS!! I bought the tiny pack and I am wishing also that I didn't like it so much. It went so well on my oatmeal that I am craving it everyday.

I buy the Justin's PB at Target in the little packages. That way it's a special treat (like when I travel). Otherwise I'd eat it all the time! I also saw it on sale yesterday at my Whole Foods, 2 little packages/$1.

I love cherries! Rainier are my favorite! Like Jackie said, I was buying the little packs of that nut butter...till I saw the huge jar at the store! yikes! It's delicious!
