Hi, I'm Rachel.

A few years ago I could barely boil water.

True story.

Determined to be a kick ass wife, I developed a love for football and learned to cook in my tiny Jersey City kitchen. I spend my days working in Manhattan, my nights and weekends chasing after a rambunctious toddler, and the hours in between cooking with my husband and feeding my TV habit...oh, and I blog about it all!

Welcome to my world!

Peanut Butter + Jelly Oats in a Jar and Kimberly's Graduating!

Today is a special day.

My younger sister Kimberly is graduating from Brooklyn Law School! Here she is modeling a few pieces of her graduation gown over the weekend.

Hooray! I'm so proud of her! Over the last 3 years, I've seen her spend countless hours and weekends at the library, studying non-stop and fully dedicating her life to fulfilling her dream of becoming a lawyer.

Though she will spend the summer studying for the Bar at the end of July (and I probably won't see her much over the next 6 weeks!), I'm so happy to share this milestone with her and the rest of our family today. Love you Kimmi!! You did it!

So while the Cannons are all out celebrating today, I will first be kicking off my day right. With Oats in a Jar!

Did you ever think...if only I could get to those last bits of peanut butter left lingering in the jar?

Well then you are in luck.

It's not exactly a secret that I looooove peanut butter. So when I saw Oats in a Jar making the {many, many} rounds in the food blog world, I knew that I was destined to give it a try.

It all starts with a nearly empty jar of peanut butter (lord knows, I rack those up pretty quickly).

Cook up some oatmeal, add your fixins, pour into said nearly empty jar of peanut butter and enjoy. It's a PB lover's dream. It's easy, filling and the perfect way to start the day. For this version, I decided to add a scoop of raspberry jam for that PB + J flavor that I crave so much. If you have the means, I highly recommend.

Peanut Butter + Jelly Oats in a Jar
1 nearly empty jar of nut butter (I used organic natural creamy peanut!)
1 C unsweetened almond milk
1/2 C quick cooking oats
sweetener, to taste (I used agave nectar)
1-2 scoops raspberry jam
ground cinnamon
pinch kosher salt

Prep the oats as usual: Heat the almond milk and salt to just a boil, then add the oats, stirring and cooking for 1 minute over medium heat. Stir in the cinnamon and agave nectar, to taste. Pour into the nearly empty jar of peanut butter.

Stir it up to scrape up the bits of PB around the jar. Top with jam.

Enjoy immediately.

Don't mind if I do.

So there you have it. Just call me the PB Monster. So what do you think? Do you have any fun twists on oatmeal? Or peanut butter for that matter?

First Congrats to your sister...what an accomplishement!
Second, I was just trying to scrape the last bits of pb off the sides of the jar so not to waste a single bit. And now you've just provided the best idea! Thanks sooooo much. I love it!

I get so excited every time I have a pb jar ready for oats in a jar lol. Congrats to your sister!

I love doing overnight oats in my plastic PB containers - because I'm so darn lazy in the AM - and so I don't have to microwave in a plastic container!

I'll just have to try it next time I have a jar because I can't decide if I would like them or not! I usually add pb to my oats, but I like every bite to have pb in it!

oh man. I have all the ingredients but an almost empty almond butter jar. MAKING! Looks SO good!
