Hi, I'm Rachel.

A few years ago I could barely boil water.

True story.

Determined to be a kick ass wife, I developed a love for football and learned to cook in my tiny Jersey City kitchen. I spend my days working in Manhattan, my nights and weekends chasing after a rambunctious toddler, and the hours in between cooking with my husband and feeding my TV habit...oh, and I blog about it all!

Healthy Mint Chocolate Shakes

Last night, Shaun had bowling. I came home from work and did girly things. Like get my hair set for overnight curling (I'm told this works best with dirrrty hair, and mine is primed and ready if you know what I mean ;) ), watch reruns of True Blood on HBO, catch up on blogs and look for hair styles to wear at my brother-in-law's wedding next week. All in all, not a bad night, no?

The other thing that always gets me on a solo night in is what to have for dinner. Admittedly, I'm happy with a nice plate of cheese and crackers for dinner, but in the interest of keeping the calories down for my solo girl's night, I enjoyed a lightened up English muffin pizza and a shake for dessert.

I love shakes, smoothies, you name it. Frozen bananas are a great base to add some texture and fullness to any non-ice cream shake or smoothie. With a bit of flavored extract and chocolate syrup, I had myself a bonafide mint chocolate shake. And I liked it.

Healthy Mint Chocolate Shake
1 C almond milk (or milk of your choice)
1 large banana, preferably frozen
splash of peppermint extract
chocolate syrup (I use Hershey's Lite)
ice cubes (as many as ya like)
2 drops green food coloring

Blend together the milk, banana, peppermint extract and ice cubes (if using). Add the food coloring and blend once more. Squeeze chocolate syrup around sides of your glass. Pour in the mint shake. Squirt a few more drops of chocolate syrup in for good measure.

Sip slowly with a straw, being extra careful to avoide brain freeze. Yum!

So there you have it. A delicious, nutritious and light shake that's perfect for any summer evening.

Questions of the Day:

Do you like shakes and smoothies? If so, what's your favorite kind?

How often do you wash your hair?

Mmmm...I love shakes. The shamrock shake at mcdonalds used to be my fave so this looks right up my alley! I do think the banana thing makes a big difference in the texture---avocado makes it creamy too, but adds a little avo-flavor which can be weird!
I only wash my hair when I "have to." So, like every other day (unless it gets too sweaty from working out), and sometimes I go three days. It helps conserve shampoo/conditioner and water, since my showers are shorter! That is my justification anyway...

I need this and have almond milk and a banana. As well as mint extract. You will next find me with a major brain freeze.

I love shakes and smoothies, although I don't have shakes often, but when I do I like regular old chocolate the best. I have smoothies frequently and would definitely say that smoothies are not the same without banana!

I only wash my hair twice a week at most and have found that since I stopped washing my hair daily a few years ago, my hair has never been healthier. It really does make a huge difference. Dry shampoo is hands down the best invention since sliced bread!

I couldn't agree more! I wash my hair every other day or every 3rd day even. Dry shampoo is a miracle product. My hair also looks way better than it did when I washed it every day!

My boyfriend made a giant mint chocolate milkshake last night using up the last of my girl scout cookies! If only this would have come a day sooner, I could still be enjoying my thin mints :)

I have to wash my hair mostly every day. It's short and gets greasy!

this is one of my all-time favorites! you should have seen me the first time I tried to make one, though.... total disaster with way too much peppermint extract (aka it tasted like toothpaste).

I generally wash my hair too much since I sweat so much when I run. on off-days, though, I'm working on not washing it. :)

Are you prepared to be totally grossed out?

I literally only wash my hair once a week. The shortest I'll go is 5 days - and by then, I NEED it. I do the "bun" thing on day 6 & 7 to cover up the unwashed look - however, I've found that my hair is the healthiest it's ever been, despite my crazy bleaching and dying cycle that I put it through.

Plus, it makes my AM routine WAY quicker. I dread the days that I have to wash my hair because it adds an hours to my "get ready" time. I have naturally curly hair, so drying and straightening it takes forever, no matter how short it is!

ps; i was my hair every other day:)

I am currently obsessed with shakes and this looks like a great addition to my repertoire.

I have been absolutely loving frozen bananas in smoothies this summer but am almost always making them fruity. I love the mint and chocolate :) Definitely an awesome, lower guilt treat.
