Phileo Yogurt

Earlier this week, my friend Lindsey introduced my sister Kim and me to Phileo Yogurt, a small fro-yo place in the Village. In what I've deemed a Pinkberry-Tasti Delite hybrid, Phileo kicks it up a notch on the fun meter with self-service yogurt stations. Don't I look like I'm having a blast?

With a wall of 10+ yogurt machines, there's really a flavor for everyone. While Tasti D is one of my all-time favorites, somehow I just haven't jumped on the Pinkberry bandwagon. Something about frozen tart yogurt seems less like a delicious treat and more like a mediocre healthy snack. But with many flavors to choose from, Phileo really hits it out of the proverbial park. And if you do like fro-yo of the tart variety, fear not, as that remains an option at Phileo.

With flavors including tart, strawberry, banana, coconut and my own personal favorites, cookies 'n cream and peanut butter, the options are really much wider than Pinkberry or Tasti D.

Though I have to give Phileo a bit less props since their yogurt pay system is based on weight of the yogurt and toppings. So they give you a giant cup that you are left to fill and could end up spending a whopping $7 on a cup of yogurt. A word to the wise - the cups are giant and you could probably get away with only filling them about half way.

The topping bar was of course the best part, especially when options include candy, cereal, chocolate chips, sprinkles and cookies...

Here's what I ended up with:

Let's get a little closer. What can I say? The 8 year old in me just couldn't resist the Cap'n Crunch and Fruity Pebbles topping on top of a half cookies 'n cream, half peanut butter fro-yo. Oh and I should mention that the delightful combination of Cap'n Crunch and peanut butter fro-yo really brought it back old school with reminiscent flavor of the childhood favorite Peanut Butter Crunch cereal. Ah the good old days.

So there you have it. My new favorite fro-yo combo. Oh, and the bonus is that it just so happens to be right near Keste Pizza & Vino, and we all know how I feel about that. But what about you? How do you like your fro-yo?

Pink Coconut Cupcakes

For Easter last week, I whipped up two full batches of homemade cupcakes. Since it was Easter, the obligatory coconut was in full effect with a Barefoot Contessa recipe that I'd been dreaming about since I made these last Spring for Catherine's bridal shower. Thick and bordering on cornbread-like, these cupcakes are a serious change from the traditional chocolate or vanilla with buttercream. The frosting is made extra fabulous with the addition of almond extract (one of my favorite extracts). Let's get down to the goods, shall we?

Pink Coconut Cupcakes
*Adapted from Ina Garten
3/4 pound (3 sticks) unsalted butter, room temperature
2 cups sugar
5 extra-large eggs at room temperature
1 1/2 teaspoons pure vanilla extract
1 1/2 teaspoons pure almond extract
3 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup buttermilk
1 bag sweetened, shredded coconut plus more for garnish

Preheat the oven to 325 degrees F. In a stand mixer fitted with the paddle attachment, cream the butter and sugar until light and fluffy, about 5 minutes. With the mixer on low speed, add the eggs, one at a time. (Note: I crack the eggs into a separate bowl first, just in case you get a bad one, your whole mixture won't be ruined) Scrape down the bowl after each addition. Add the vanilla extract and almond extract and mix well.

In a separate bowl, sift together flour, baking power, baking soda and salt. In 3 parts, alternately add the dry ingredients and the buttermilk to the mixer, beginning and ending with the dry. Mix until just combined. Fold in 7 ounces of coconut - and don't overmix, or the battern will get tough.

Line a muffin pan with paper liners. Fill each to almost the top with batter. Bake for 25 to 25 minutes, until a toothpick comes out clean (mine took about 25 minutes). Allow to cool in the pan for 15 minutes, then move them to a baking rack to cool completely. Frost 'em.
My Favorite Pink Frosting:
1 8oz pkg cream cheese, at room temperature
1 stick unsalted butter, at room temperature
1 tsp vanilla extract
1/2 tsp almond extract
2 C confectioners' sugar (or more for desired sweetness)
1-2 drops of red food coloring
Sweetened coconut, for sprinkling

Cream together cream cheese, butter, vanilla and almond extracts. Add confectioners' sugar and mix until smooth and fluffy. Add in a drop or two of red food coloring until desired pinkness is reached. Frost the cupcakes and sprinkle with the remaining coconut.

Oh, and I should mention that to tote these little guys around, I used my handy cupcake caddy that I purchased at Bed Bath & Beyond about a year ago. I got my money's worth and have carried my cakes in style, from Key Lime in the Coconut to the Irish Car Bomb variety.

Easter Fun (and a Special Guest)

This past weekend, I started the Easter festivities a day early by heading over to NYC for a city day with my mom and sisters. Shopping, celeb sightings, a Broadway show, and underrated lunch at Soho Park made this the perfect spring day in Manhattan. Not only did I find some beyond adorable Easter eats at Dean & DeLuca, but as I mentioned, the day was filled with celeb sightings. Down in Soho, it was Bradley Cooper filming his new flick. Oh, he'll always be Will (from his Alias days) to me and I have to say, the in-person viewing did not disappoint. This was quickly overshadowed, however, by sighting the one and only Bill 'n Hill Clinton strolling hand-in-hand down Fifth Avenue. Yup, it happened (be patient and you might just get a sneak peak)...

Anyhow, onto the food. Dean & DeLuca is an upscale little coffee shop slash mini-grocery store with multiple locations, all of differing levels of stock. The Soho location boasts a fairly robust assortment - from fresh produce and baked goods to gourmet coffee and a small selection of housewares. If I made a lot more money, I'd shop there all the time. Anyhow, their Easter goodies were just too cute to pass up. Here's the little birdie cupcakes and full cake...aren't they sweet?

I'm pretty positive that these are the most sugary cookies I've ever laid eyes on...just look at those beautiful colors! Dinos and Bunnies and Carrots, oh my!

And lastly, the little lamb cupcakes...these are almost too adorable to eat!

So there you have it. Some super cute Easter eats from Soho's Dean & DeLuca. Couldn't you just eat them up? And because the highlight of the day really went far beyond food, I'll give you a look at the real stars of the day...

Only deterred from jumping out of the cab by the Secret Service detail, I hung myself out the taxi window and called "Mr. President!" (No offense to Mrs. Secretary, of course, but she was unfortunately a little overshadowed by the fact that we were not 10 feet from one of the greatest living presidents...) Anyhow, he didn't turn around...probably in fear that I was gun-toting or something of the sort. But I did manage to snap the above photo, which isn't too shabby considering I climbed into Mom's lap and hung out of that very cab's back window that you see above. Bradley Cooper, who?

So that was the prequel to my Easter Sunday. Fun food, a showing of Promises Promises, celeb sightings out the wazoo, followed by a fabulous Easter Sunday with the family. How did you spend your Easter weekend?
