Hi, I'm Rachel.

A few years ago I could barely boil water.

True story.

Determined to be a kick ass wife, I developed a love for football and learned to cook in my tiny Jersey City kitchen. I spend my days working in Manhattan, my nights and weekends chasing after a rambunctious toddler, and the hours in between cooking with my husband and feeding my TV habit...oh, and I blog about it all!

Welcome to my world!

Throwback Thursday: Sweet Potato Pie Smoothie

Hi guys! I'm starting a new series called Throwback Thursday. So now, in addition to your Facebook feeds being cluttered up by old photos of friends and family members with crazy hair and insane outfits, I'm going to be spotlighting a recipe or post of yore. I've been writing since 2009 and there's some old content that I'd love to make new again! I hope you enjoy!

Recently, Shaun has really been getting into smoothies for breakfast. Each night, he's been prepping a big batch of various combinations. Bananas, apples, ginger, spinach, milk, yogurt, oatmeal...it all sounds so good. My personal favorite is a nice mix of frozen banana, milk, spinach and peanut butter. Maybe some oatmeal thrown in for good measure. Is there anything better than that?

Smoothies are a slippery slope for me. I love them so much, but it often can rack up the calories in a way that I'm not totally ok with and so for now, I don't really go near them...but when I had a sip of Shaun's banana-pb version a couple of days ago...man, I miss them! So yummy!

I made the smoothie pictured above a long time ago. It's a sweet potato pie smoothie. I'm not sure what I was thinking here...but it turned into a really delicious drink! I have a weird fascination with sweet potato pie. I love sweet potatoes SO much and so one evening when I was cleaning up from dinner and had an extra sweet potato, I thought...hmm...this would be awesome in a pie

But I didn't really feel like making a pie. And one potato isn't going to get very far in a whole pie, for that matter. So what could I do with it? Add it into a smoothie of course! I had been making pumpkin pie smoothies for a while, so is sweet potato so different? I LOVE sweet sweet potatoes. Give me a sweet potato casserole topped with brown sugar, candied pecans and marshmallows any day! And if that's too much to ask, well, then I'll take this smoothie instead.

For an updated twist, I think this smoothie would be truly awesome with some additional cinnamon and nutmeg, a rim dusted with brown sugar, and a handful of mini marshmallows thrown in for good measure!

What do you think? Would you ever drink a sweet potato?

Do you like your sweet potatoes sweet or savory? {like a true foodie, I enjoy them both ways :)}

I'm a bit of a sweet potato fanatic, so YES. I would TOTALLY drink a sweet potato! Actually, it sounds all kinds of amazing!
