Go To Meal: Roasted Pepper, Goat Cheese & Basil Frittata
Sometimes, I feel really uninspired when it comes to cooking. Be it breakfast, lunch or dinner, I'm not always up for being creative and sometimes...just sometimes...I'm just plain lazy.
That's where my 'Go To' meals come in. I'm working on developing an arsenal of Go To's for all of those uncreative times. But just because I'm not reinventing the wheel doesn't mean sacrificing style, quality or deliciousness.
My roasted red pepper, goat cheese & basil frittata always fits the bill. It's bursting with complementing flavors, can be served for breakfast, lunch or dinner, and is as easy as combining all the ingredients in one bowl and pouring into a skillet. You can't beat that.
Roasted Pepper, Goat Cheese & Basil Frittata
3 whole large eggs
4 large egg whites
1/2 C mozzarella, shredded
2 oz goat cheese, crumbled
1 small jar sliced roasted red pepper strips (I use the deli slices, in canned goods aisle)
1 handful fresh basil
pinch salt
pinch fresh pepper
1 tbsp olive oil
Preheat oven to 425 degrees. In a mixing bowl, whisk together the whole eggs and egg whites. Add cheeses, roasted peppers, salt and pepper and whisk until all combined.
In a nonstick, oven-safe skillet, brush the olive oil around the bottom and up the sides. Heat the pan over medium heat. Pour in the egg mixture. Spread the whole basil leaves on top.
Over medium heat, let the egg mixture stand (do NOT mix) until the bottom and sides solidify, just a few minutes. Run a rubber spatula around the sides; when the sides are just coming together, transfer the pan to the oven for 7 to 10 minutes or until the top is completely cooked.
Let cool briefly, slice and serve.
Could that be any easier? Or prettier? I love it for its elegant simplicity. No one has to know that it actually took you 15 minutes to throw together.
So there you have it...an easy, delicious and chic meal for any time of the day.
Question of the Day:
What are your Go To Meals in a pinch?

Girl, that looks out of this world! You did such an amazing job. totally impressed, totally inspired by the ingredients and totally doing this soon. Love it
Please keep the go-to dinners coming! I've been so bad about creative dinners lately and could use some easy inspiration!
so pretty! and i looks phenomenal! definitely need to add goat cheese to my next one.
Because of you and your wonderful brunch after the Lincoln Tunnel Challenge, Ry and I now make a fritatta as one of our "prepare ahead of time" breakfasts. We make it one evening, and have 2 days of breakfast that can just be heated. I know reheated eggs sounds scary, but I think with all of the fantastic ingredients, it doesn't even taste reheated. (I'm eating it right now, as I type!) Also, if I don't have any of the "original" ingredients around, I throw other things in... spinach, gorgonzola, turkey sausage crumbles, whatever I have on hand to take the place of something that I don't have!
Kris, you are SO right...I totally forgot to add that I also make in advance and reheat - it tastes just as good as when it's just made! Love the idea of turkey sausage crumbles...I will definitely be trying all of your suggested ingredients!
Looks pretty and delish!
My go to meals lately have been all about eggs...aside from that, I can easily throw together a sandwich on toast with avocado. Boring but satisfying!
So simple, so beautiful, and looks so amazing. This egg creation definitely rivals (and beats) my go to scrambled eggs every morning.
My go to which is also ideal in a time crunch is an English muffin with peanut butter and jelly with a pinch of salt on top. Works every time.
My go-to meal (other than an Amy's frozen meal) is a salad - I always have spinach (or spring mix) and nuts and dried fruit with gorgonzola cheese - I just mix them together and have a great, easy meal that doesn't heat up my apartment!
i LOVE frittatas... yours looks so awesome
I love all these things! and throw them in one dish? that's a winner! yum!
That was my thought, too. cdshnq cdshnq - moncler coats uk.
