The summer is always super busy for Shaun and me.
Lately it has seemed as though one of us has been out almost every other weeknight. Sometimes, I'll make a couple of trays of food on Sunday to be eaten throughout the week, but on a weekend like this past one spent at the Jersey shore (where we barely had time to pick up groceries, let alone prep for the week), it just doesn't get done.
I'm trying to stockpile some Dinner for One recipes so that I can quickly and easily whip up a delicious dinner for myself - or one that Shaun can make for himself - should either of us be solo and without a premade dish. I'm planning an article featuring all these recipes at some point!
Last night, I came up with a new one that I think you're going to like. It was so super easy and tasty. And it can be altered to fit your own tastes or dietary needs! Yay!
I love using the tortilla as a base because it's easy to work with, is healthy and is not as doughy or filling as a real pizza crust (not that there's anything wrong with that either) but can still be crispy. Nutritious and delicious. Ok maybe not that nutritious, but it's not unhealthy either :)

Skillet Tortilla Pizza for One
1 8" tortilla (I used whole wheat)
1/4 C tomato sauce (or thereabouts, I used just enough to cover most of the tortilla)
1/4 C mozzarella cheese (I used part skim)
2 tsp grated parmesean cheese
dried oregano
fresh (or dried) basil
2 tsp light butter
Lightly butter both sides of the tortilla and lay in a skillet over medium heat. When bottom starts to brown, flip it over.
Spread some of the tomato sauce on top (don't use too much or it will be squishy!)
Layer on some oregano and {fresh} basil, followed by the cheesy goodness...
At this point, turn off the heat and cover with a lid for 2-3 minutes until the cheese melts.
Cut into quarters and get in there! Yummmm!
Oh and you can also add some turkey pepperoni, onions or diced bell peppers too! Though I'd cook the peppers and onions first to soften 'em up.
I loved eating this for dinner last night. Serve it up with a side of sauteed or roasted veggies and you're set. 'Mmmmm.
